I'm sure you've seen this recipe (or a version of it) floating around Pinterest. I'm not sure where I first found the recipe a few years ago, but I've been making it for several years now. The recipe even made it to our family's cookbook my brother had printed.
Poor Man's Toffee
2 sticks unsalted butter
1 cup, packed brown sugar
2 bags (of 11 ounces) chocolate chips
Saltine crackers (1 to 2 sleeves)
1 cup of chopped pecans (or any nut would work)
Preheat oven to 400ºF.
Line jelly roll pan or cookie sheet with foil and spray with non-stick spray.
Lay a flat layer of Saltine's in the jelly roll pan. I usually end up breaking some crackers in half to fill in any gaps.
In a saucepan, melt the sugar and butter until boiling. Reduce heat and simmer, uncovered, for 3-4 minutes or until mixture is thickened and sugar is completely dissolved. Pour this mixture over the crackers and spread to coat evenly.
Bake for 5-6 minutes, or until the toffee becomes bubbly. Turn off oven, then take out of the oven and let it sit for a couple of minutes. If any crackers moved when you took it out of the oven, push them back into place with a fork.
Then, sprinkle on the chocolate chips. Put the pan back in the turned off oven for 2-3 minutes to help the chips melt a bit. Remove from oven, then spread the chocolate to cover all the crackers. Last, sprinkle the chopped nuts over the top and gently push down any large pieces.
Let cool until hardened. Once cooled then break into pieces. These can be stored in the refrigerator for weeks.
